If you are looking for something yummy for dinner tonight, look no further. Vegetable Beef Skillet has no dairy and no grains, so it works for many diet restrictions. This is a super easy one pot meal with a lot of vegetables. Perfect for a fall evening.
- 1 ½ lbs. ground beef
- ½ large yellow onion, diced
- 2 Tbsp minced garlic
- ½ lb. kale, chopped
- 1 cup sundried tomatoes, packed in oil
- 20 oz. diced, cooked sweet potato (bake in oven at 350˚ for 45 minutes, cool, then cut into cubes before adding to skillet)
- ¼ cup garlic balsamic dressing (click here for recipe)
Brown ground beef over medium heat. Add onion and cook until soft. Add garlic and cook 2-3 minutes. Pour kale over the top and let it sit for a minute or two as it quickly begins to wilt down. When there is room, mix kale into meat mixture. Stir in sundried tomatoes. Pour sweet potato over everything and distribute evenly. Put a lid on the skillet, turn down heat to medium-low. Cook for 25-30 minutes until sweet potato is done.
Pour garlic balsamic dressing over the vegetable beef skillet and mix in well. Serve hot with green salad or a cruciferous vegetable.
